Biryani is a popular South Asian dish that consists of spiced rice and meat, fish, or vegetables. The following is a recipe for chicken biryani:
Ingredients:
1 kg chicken, cut into pieces
2 cups basmati rice
4 cups water
1 cup plain yogurt
1 large onion, sliced
4 garlic cloves, minced
2-inch piece of ginger, peeled and grated
2 bay leaves
4 cardamom pods
4 cloves
1 cinnamon stick
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon turmeric
1 teaspoon chili powder
1 teaspoon salt
2 tablespoons vegetable oil
Handful of chopped cilantro (optional)
Instructions:
Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
Heat the oil in a large pot over medium heat. Add the whole spices (bay leaves, cardamom pods, cloves, cinnamon stick, cumin seeds, and coriander seeds) and cook until fragrant, about 1 minute.
Add the sliced onion to the pot and cook until softened and browned, about 10 minutes.
Add the minced garlic and grated ginger to the pot and cook for another minute.
Add the chicken to the pot and cook until browned, about 10 minutes.
Add the yogurt, turmeric, chili powder, and salt to the pot and stir to combine.
Add the rice to the pot and stir gently to coat the rice in the spice mixture.
Pour the water over the rice and chicken, and bring to a boil.
Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is cooked and the chicken is tender.
Turn off the heat and let the biryani rest for 10 minutes. Fluff the rice with a fork and sprinkle with cilantro, if using, before serving.
